I have an OWC ThunderBay 4 Mini with one SSD as a non-RAID volume. I recently purchased a second SSD of the same size to double the size of the volume. Is it possible to "update" the current non-RAID volume to RAID 0 volume without loosing the data on the first drive?

Sorry, no, you must delete and create a new RAID 0 volume.
