I currently have my music collection on a QNAP NAS, RAID 1. One of my HDDs has failed, and trying to replace it has proved so frustrating that I am looking at alternatives to QNAP. Question: can I simply install my remaining good HDD in a new OWC box with SoftRaid software, add some additional HDDs, and carry on?

I am not sure. It depends on whether the QNAP has a proprietary header on the disk.
If you connect it to the Mac, it will ether mount immediately (where you can use SoftRAID), or it will put up the "this disk needs to be initialized dialog box. If the latter, then no.
