Should I format my SoftRAID volume as APFS or HFS+?

Hello everyone,
I've read the guide but wanted if possible a further confirmation, I've just paired my closure owc express 4m2 with a thunderbay 4 with x4 Western Digital Ultrastar DC HC520 (He12) 3.5'' HDD 12TB 7200RPM SATA 6Gb/s 256MB | 0F30143.

This closure will be for video backup and I was thinking to do the raid 5 that they say is the most suitable (sacrificing a 12tb disk for this), I did a test of volume creation and when it was time to choose there is this warning, I would have gone directly with apfs but it would seem to be the wrong choice because then I would get back the slower closure in a short time. Is this still the case? Even with Monterey 12.2.1 and this kind of closure, raid and disks is it better that I use hfs+? Now I'm certifying all the disks so I can't do anything before 4 days, when I'm done I'd like to mount it in the best way to have more speed and security and then forget everything and let only SoftRaid monitor work.

It is still true that APFS volumes on HFS will drop in performance by 50% over time, because APFS fragments files constantly, so there is more and more lag, as the platters have to find all the file fragments to access the files.

SSD's have much lower latency so this performance degradation is much less serious.

Thank you so much for the reply, when it finishes the disks certify (no less than 4 days it seems it's been at 98 hours left all day) i will do the raid 5 as you recommend.

One question off topic, I just re mount the closure express 4m2 with x4 2tb ssd nvme , the 4 disks disks certified it in 6 hours.
I recreated the raid 0 as it was before in apfs, but now in the bench march with blackmagic disk speed test i get 2150mb and read 1800mb, when before it was over 2800mb.

Is it possible that it goes slower because the closure owc thunderbay 4 is connected with the thunderbolt 3 cable not directly to the mac but to the back free port of the express 4m2?
Theoretically, although I am not a technician, if one of the 2 closure's it slow down should be the thunderbay 4 and not the express 4m2 hat is directly connected to the mac. I'm wrong? Or maybe this disks verify that thunderbay is doing is sucking away power?

@serghios Try different combinations, including the 4M2 alone. Let me know.
