Initialize the new disk with SoftRAID
Unmount the volume manually (all volumes on those disks). then use "Convert" to convert the volume to a mirror and add the disk.
Restart and you should be OK.

A side effect of our APFS (lack of) support, we cannot determine what a volume type is (unknown) so cannot convert. In a few months or less perhaps, we will have 6.1 out, with APFS support and can support this. You can wait, or perhaps try to Carbon Copy Cloner to clone to the other disk temporarily.
I have an APFS formatted drive acting as a Mac Time Machine drive. Now that V6.1 is out can I add two more APFS drives to make a RAID 1 array? I'm running Big Sur 11.6 on an M-1 iMac. Thanks.
We did not complete the RAID 1 APFS conversion code for 6.1. Hopefully for 6.2. So you need to create a new volume (APFS) for Time Machine with SoftRAID.
I already have a single drive APFS for TM, but was hoping to RAID it... oh well.
I know. I wish we had finished support for that. APFS was (and still is) a lot of work to support.
