Alright, I have everything in place and it works great! 

I am using this 5Gbps enclosure: https://www.amazon.ca/dp/B0739YXTHM/

Since I have 3 of these, and they're connected to the OWC Thunderbolt Hub (with the cables linked above), what can I expect for transfer speeds?

I'm retrospect, I could have paid more got a single 10Gbps enclosure that supports multiple drives. Am I still able to move these drives if I wanted?

And with that, is there an upgrade path for the XT software, since Lite doesn't support RAID 5?

I am  not sure, but probably 250MB/s by the time you go through the USB hubs, etc.

Yes you could move the drives right in. The upgrade cost is $99, if you use a coupon you can apply for. You can also purchase a 0GB with SoftRAID XT, for about $70 more.

Compared to the likely 250MB/s above, what speeds could I expect? If it's a substantial increase (which it likely is), I might just do that!

Yes that is the model.
I would expect you to see 400-500MB/s over Thunderbolt. faster drives will be somewhat faster.

Quick question — the license that comes with a Thunderbay 4 RAID 5 is for a 5.x version of XT? How can I apply my license code to the 6.x public beta? Do I have to uninstall "regular" SoftRAID and install XT first (which uses the older driver)?

Beta versions do not need serial numbers. When we have 6.0 ready for release, there will be upgrade paths.

Received my package from Amazon, and a serial is on the back for XT. Will I have to pay for an upgrade for the latest software in this case?

It turns out that that was the Thunderbolt 2 model, so I had to return it. Waiting for a new one directly from OWC. Oops, haha!
