Installed SoftRAID 7.5 just now.

Once again, though, SoftRAID install did NOT prompt me with an ALLOW box in Security preferences to "Allow System software from developer Other World Computing." I thought this was necessary to insure proper/optimal operation. (?) I did give SR 7.5 "Full Disk Access" under Security prefs / Privacy tab.

System is running okay for now, but it's only been running in newly-installed configuration for about an hour. Performing disk validation now, so will keep an eye on system throughout the day to hopefully see continuous operation with no panics.

Your iBoot panic is MacOS, not related to SoftRAID.

I would "reinstall" MacOS, there is a problem in your MacOS installation, here are a couple users with the same issue:
https://discussions.apple.com/thread/253743699

Start up into recovery mode, and reinstall. It won't delete anything, but should fix this issue with any luck.

On my MacStudio running OS 12.6.8 and SR 7.0.1, I began having the sudden freezes/restarts described in this forum after I'd had months of smooth sailing. In my case, the error listed after returning to desktop is always "iBoot Panic."

After a day of intermittent iBoot panic restart cycles with 7.0.1, I decided to upgrade to SR 7.5 today – and after the installation, the issue only got worse: The system can't run more than 1-2 minutes after login before going into the freeze/restart cycle with "iBoot panic" error.

Now I'm wondering if my 7.5 installation process isn't executing properly:

First off, I DID boot into Recovery Mode many months ago (during first install of SoftRAID on this M1 Mac) to change the Startup Security Utility setting to "Allow user management of kernel extensions from identified developers."

But I'm NOT getting the prompt during SR 7.5 installation from within Security & Privacy prefs to click "Allow System software from developer OWC..." The SR 7.5 installation does prompt me to go into Security prefs to do that.... but there's no "Allow OWC..." message within the Security prefs window (pic attached).

To make this even more confusing: OWC's YouTube video "SoftRAID 7.5 is HERE!" says "The user can simply drag SoftRAID to Applications folder, and begin to work" without changing security settings as before, but (as pictured) the 7.5 install STILL directs the user to change settings in Security preferences.

So OWC's own video says install should proceed via simple "drag & drop" into Applications, but the 7.5 installer is showing that one should still go into Security prefs. So which is it? And why does neither method appear to be working?
