So stick with reputable brands to be safest. Companies that are likely to adhere to the specs, rather than cut corners. We will see if the stability improves.  

Is there a recommended USB-C cable spec/brand I should stick to?

Looks like you may have had some cabling/connection issues.

Your Time Machine volume no longer mounts? even after restart?

You can try "first aid" on it (Disk Utility) to see if that can mount it, else we may need to start over. Since this is Time Machine, there is little need to "recover" the data using any data recovery apps.
