I have two internal 500GB drives that I would like to stripe together for 1TB and I have an external 1GB drive that I would like to use to mirror the striped internal drives.
Is this possible?

What you are asking is to create a smaller stripe, then to mirror it to a single larger disk.
Sorry, no we do not support what is essentially a 3 drive RAID 10 volume. It takes 4 disks to create a RAID 1+0 volume.
This is something we are considering for the future.

It is unlikely to be a feature for SoftRAID 5.x. Beyond that, I cannot give a time line.
