ON IT'S WAY:
OWC ThunderBay 6 SoftRaid Lite plus optional full SoftRaid license (not the XT version)
6 - 10TB Red Pro 7200 rpm SATA III 3.5" drives
CURRENT HARDWARE:
10GB Internal Network switch and machine NICs
MacMini Server with 10GB NIC, 64GB mem, 1TB SSD, TB3/USB-C ports
Multiple External T-Bolt G-Raids ChronoSync'd for various file backups and usage
MY MAIN USAGE:
1 - Digital Raw Photo Storage to use with Lightroom Catalogs dating back to 1976
2 - Roon Server streaming flac music files to home stereo system (currently 3 ½ TB)
3 - Plex Media Server streaming internally only (TV and Movies)
4 - File server for family
5 - TimeMachine Backups
SUGGESTIONS NEEDED:
1- Which Version of Raid would be best for speed/dependability? I would guess 30TB would easily serve our needs (out of min. 60TB available to SoftRaid), so having the R/W speed on the ThunderBay 6 to (almost) saturate a 10GB network transfer speeds is appreciated. I will be also be periodically backing up the ThunderBay to other external drives on the network via ChronoSync.
2 - Should I create multiple fixed volumes, rather than just one giant volume with multiple descriptive folders/sub-folders for storage? Currently the family just mounts the network drive as a single volume with folders for their usage. What if I need to increase a volume size to store a certain kind of files?

P.S. I have read and will follow the Certify, Verify, Initialize steps before I start using the raid drives.

Less volumes are easier to manage. One advantage of multiple volumes would be security, you can set the sharing preferences different for each volume.
Since you have reasonably solid backup strategy, RAID 5 is probably best. More capacity than RAID 1+0, and faster.
The Time Machine should get its own volume, though. It will gobble all your available space otherwise, over time.
