It appears your disks are showing up individually, and were "striped" together using OS X RAID. WD has a setting in most of those enclosures to make the box appear as a single 8TB drive (RAID 0 mode). If you can set that, then yes you can create a large volume with SoftRAID. Note: the 16TB "disk" is also a stripe volume. While you will have two copies of your data, all of your data is on uprotected stripe volumes.
