I have a mini 2018 with Catalina (10.15.6, haven't updated to 10.15.7 yet).
Just installed SoftRAID 5.8.4. I turned off secure boot, too.
I'm using "other email account" with an IP (192.168.0.99), port 25, authentication none, connect type normal. The mail server does not get any connection, as I'm tailing the log (/var/log/maillog).
What happens when I hot the "Send Test Email" button is I see "Status: connecting to server" and it just sits there forever. I've left it in that state for 15 to 20 minutes.
Since I have postfix running on the mini, with forwarding to that same server, I tried 127.0.0.1 and saw this in the logs on the mini:

Btw, I tried gmail with an app password... that didn't work either.
I also have the firewall turned off on the machine.
Lastly, I'm not 100% sure the localhost test system output was from SoftRAID. I did use `telnet localhost 25` to test that it was working.
It's almost like SoftRAID is not connecting to port 25 on the machines I use to test.
I am not sure about your other email, but with gmail, you must check "less secure" for third party apps, so as to use OAuth 1.0, rather than the rewritten 2.0. Have you tried that?
@softraid-support I have not done the "less secure" method because I have 2FA turned on and I think it said you can't have both. I don't want to turn off 2FA.
I only tried gmail because I couldn't get the local delivery to work.
My local SMTP servers are on port 25 and there is no authentication at all. I can `telnet` to them and talk in a Terminal.
It appears that SoftRAID isn't even touching port 25.
Possible. Do you have access to any other email accounts? Like a disposable/left over gmail account you do not use? All SoftRAID is doing is SMTP sending some emails.
We will be working on this code for 6.0, I admit it is temparmental.
@softraid-support I do have another gmail account. I set up forwarding from it to the account I care about. I tested it from my work email, and it forwards fine.
I set the User Name to this (both with and without @gmail.com), the gmail account password. I turned on less secure apps.
I set Configure For to "Gmail" and left the other settings at the default (smtp.gmail.com, 587, Password, TLS).
It still hangs when sending. Just says "Status: connecting to server". Sits there for as long as I leave it.
This indicates it must be a bad plist or something. Go into the /Library/Extensions/Application Support/SOftRAID folder.
Try deleting the email plist. restart

I'll try that, but I'm doing a Certify of a couple of 10T drives... so it will be a while.
I assume you mean this one: /Library/Application Support/SoftRAID/EmailPreferences.plist
Yes that is the file. No rush.
OK, deleted it, restarted the app. Added settings. Same deal. Any other ideas? I would really like to get this to work, it's the last piece of setup I need to do. I can remove the "OutgoingServerPassword" part of the plist and send it to you, if that would help. Thanks.

Can you do a test with a clean install?
(easy way below)
Run Disk Utility
Create a new volume inside your startup disk. (Its APFS, it can share the space)
Internet recovery mode - command r
reinstall Catalina pick the new volume.
Run SoftRAID and see if you can get at least the email notification logging to work, and better, notifications.
That is a lot of work. Nothing else we can try before that? Not to mention the machine is in service now and the downtime would be painful.
