So I made a raid 5 with the softraid 6 beta that's working flawlessly on my 16-inch intel MacBook pro, and I've been using it to work with. I have everything backed up to an older RAID so I'm not worried about losing data but I'd like to know... when softraid XT 6 is released will I be able to just swap to that and continue as usual or would I have to rebuild?
Yes, all you need to do is run the new version, just as you would install a new beta. Very simple.

The SoftRAID XT application is no more. What we did was consolidate the application to "pro" and XT" functionality, based on the license.
So just get SoftRAID 6.0.1. Upgrade your license to the 6.0 license.
WHAT?! You guys rock. I honestly went with Softraid because a friend of mine (also in production) said his Thunderbay has been rock steady but I love the support I see on the forums here too.
