Hello,
I have FileVault turned on providing whole disk encryption for my iMac. Can I extend that to my SoftRAID setup? Or can I use a different encryption approach if FileVault won't work?
I have two 6TB external USB drives mirrored.

In the future we expect encyrytion to function with APFS volumes in SoftRAID 6.x.
We do not have that working yet, but expect that to be available later this year.

It appears that Apple will not fix the bug preventing this.
So no, we are unlikely to support encryption under HFS.

SoftRAID 6.x will support both APFS and encryption. We are targeting spring.

Good question, encryption support is also a very important issue for us because we work with sensitive information and without it that would be deal breaker,

We would like to, however File Vault does not seem to work for SoftRAID volumes.
So encryption will most likely only be available for APFS volumes.
