According to OWC, my RAID arrays created with version 7.5 will work fine with MacOS Sequoia. So that means I don't need to upgrade to SoftRAID 8 unless I want to make a new RAID array? I would like to be sure before I install Sequoia. I don't want to lose access to my files.

Yes it will mount fine. You can purchase SoftRAID standard (free), which has minimal features, but will let you replace a failed disk.
