So I bought SoftRAID Lite, entered the serial number but most ever single feature is greyed out... why?

Because you have not initialized any disks with SoftRAID and created SoftRAID volumes with it?
The SoftRAID volumes menu only manages SoftRAID volumes.
Connect a couple disks and initialize them. Then create a new volume. Then you can manage those volumes.

But isn't there the section to convert existing raids to softraid drives?

Not at this time. We expect this to be in 5.2, and should be in beta soon with this feature.

Got it. I just asked because I was reading through the "help" files and saw the feature was already listed in there

Yes and the release notes explain that it is not there at this time. ;-)
