Why haven't you created the Raid 1 to Read like a Raid 0 since there are 2 drives to read from, to double the read speed?

SoftRAID absolutely does striped reads.
There is a complication for benchmarking performance, it is difficult to get the benchmarks showing a doubling of performance, as drives aggressively read ahead, and much of that data has to be discarded.
SoftRAID maximizes mirror read performance as best as possible. it may not show in all benchmarks and may not show up with all drive models.
