This is an unusual kernel panic.
I cannot find any similar kernel panics on the web, but this does appear to be in the file system. I even searched for the one driver I was not familiar with, it.murus.nke.afw, which I did not find any complaints about.
You have a lot of RAM. is it all the same brand? If not, what brands are installed?
Its interesting that there is a "beep" associated with your panic, whether a symptom, or a cause, I cannot know. there are no disk failure symptoms that I can see. Do you ever hear this sound, not associated with a panic?
You can stay with 5.8.4 as long as you do not upgrade to Big Sur. But we hope to keep improving 6.0 to encourage you to upgrade.
@softraid-support see I just spend several thousand $ on your Hardware which just gives me grieve, I did not really consider that on top of the Hardware I pretty much would also buy into a software subscription which is required to keep your hardware running.
I have had many different Raid systems from Drobo to Promise to Lacie and every single one provides the Software required to run the Raid's for free including all upgrades. And yes I will upgrade to Big Sure the only reasons I haven't is again that you guys are light years behind with your Software.
@softraid-support Murus is a firewall, I changed from little snitch as I thought maybe Little Snitch causes the issues. No, I never hear the beep otherwise the Thunderbay makes the noise then the Thunderbay restarts and the screens go black and the machine restarts. The RAM is OWC Ram 2 x32 GB + the 2 x 4 GB apple Ram
Hate to ask, but is the 4GB RAM from Apple uninstallable? or is it permanent?
If permanent, what if you temporarily remove the OWC memory for testing? Just to be sure.
the SoftRAID driver reserves a modest amount of RAM, which moves memory up the stack. I know Crucial/Apple mixing have issues, despite Crucial making Apple RAM. So it is possible there is a memory issue, worth the test. (I hope not)
I do not think this is a drive issue. SoftRAID is not showing any disk with problems, so I am unsure of the cause. the panic log is not pointing to anything specific. I am guessing the "beep" is just a disk access sound. Perhaps the drive powering down, or making an access. Its possible it is a power cycle thing also. If a disk was cycling power, though, it should be in the logs.
@softraid-support no I think I can uninstall the Apple Ram happy to give that a go and see how it works. Given I purchased the HDsix month or so ago I would assume there is a free upgrade to version 6 of Soft Raid?
I hear you on upgrading, but we are still supporting enclosures from 2014, adding features, without obsoleting any hardware. this was our first paid upgrade since 2014, (with about free 35 updates). I do not know what the future holds, hopefully we keep giving users great value with SoftRAID.
@softraid-support ok my encloser was only purchased a few months ago so I would assume I can get at least 12 months out of what I purchased, I don't think that's unreasonable to ask
XT free upgrades are from the announcement of Big Sur last year. So you should be in that category.

I uninstalled the Apple Ram, unfortunately the OWC Tutorial does not provide any suggestions for which slots to use or how to match ram.
Anyway did more research and now only have 2 x 32GB OWC Dims in Slot 2 and 4 and will see if that changes anything

no ram is not the issue, as I had another Kernel Panic, is there any way to uninstall soft Raid and still use my OWC Thunderbay? Or is any OWC device pretty much Useless without Softraid?

Yes, you can use Apple's standard driver, but no RAID 5.
I do not see SoftRAID in the back trace, which is why I asked you to test the RAM. The fact there is a sound just before the panic is interesting. Possibly it is the enclosure, or a drive.
You replaced one of your disks in the past couple months, correct?
Did you get a predicted failure alert? What were the symptoms?
Its possible a disk is failing, but it would be unusual to have no symptoms in the log, or even a disk error.
How long ago did you purchase your enclosure?
Is it on a Power Conditioner, or UPS?
