The external enclosure I am using has died (my guess at the moment is the power supply failed) but I just wanted to check that I can move the disks into a new enclosure and SoftRAID will be fine? Any gotchas I need to be aware of?

You are correct. Enclosures are transparent to both SoftRAID and macOS. Just swap them.
