I have filled my mirrored drives and now want to split them.  My intention is to put one of them in a single drive external case so I can access the files as needed and then store the other in an offsite location.  I did the split but one drive is still a mirror.  How do I change the status to be the same as the one that was split so I can store it safely?

It is safe regardless. Its state is "mirror missing secondary disk". If you feel more comfortabl, use "convert" to make it a non RAID volume. Either way, it will behave the same to macOS.
