I'm using a MacBookPro 2016 with Sierra and a 4disk SoftRaid5
I just got an APC 600M UPS and connected through the USB comms port.
In the EnergySaver preferences under theUPS tab there is only a slider for Display sleep. I guess Sierra knows this is a MacBook so doesn't offer disk power-down options.

Obviously I need the SoftRAID to put the RAID to sleep or dismount before the UPS battery dies. Is this handled at all?

the UPS software should be able to manage a shutdown as the battery backup loses charge. In the event of a shutdown, SoftRAID volumes will also power down normally.

One suggestion for you is when you are away, unmount your volume. Then it will be "asleep" and consume less power, so your system will be able to run longer should power go out.

A laptop and internet router (alone) should be able to go up to 24 hours with a typical UPS, if no other disks/devices are connected. With a set of 4 disks, they will pull 100 watts, at least, so you will get much less up time should you lose power.
