I have my Finder Locations section in the side bar set to show hard disks and external disks but my mounted SoftRAID volume doesn't appear - although it is on my Desktop

Can do, but not sure why it doesn’t appear automatically?

It should. That is a question for Apple. The SoftRAID driver does not "talk" to the the file system. This is all a Finder thing.
