I have a licensed version of SoftRaid 5.6.4 on one Mac and a licensed version of SoftRaid Lite 5.6.4 on another Mac. Both are running High Sierra. I need to run the full version on the Mac currently running the Lite version and vice versa. What would be the best way to accomplish this?

Not hard. Essentially you are going to run the other version on each and replace the license numbers.
Here is my recommendation:
Get your two serial numbers ready on the correct machines. You can copy/paste them in, so this can be a simple process.
Shut down Mac 1. (Lite -> Full)
Go to Mac 2
Run SoftRAID Lite
Paste in your serial number for SoftRAID Lite.
"Update SoftRAID driver"
Restart.
Startup to Mac 1
(It will warn you about duplicate serial numbers.)
Run SoftRAID and paste your serial number in.
"Update SoftRAID driver"
Restart.
