I have a volume that shows up in SoftRAID without any errors but when I try to mount it, it keeps reverting back to "unmounted" status. Any help?

You are describing a situation where the volume directory is damaged.
If this is an HFS volume, I recommend purchasing Disk Warrior to rebuild the directory.
If it is APFS, then you need to copy the data off, using an application like Disk Drill (cleverfiles.com) or R-Studio.
Generally, MacOS has no volume directory repair tools. this is not a SoftRAID driver issue, the directory is the problem,
