I have created a softraid 1 volume using 3 1TB drives and one 3TB drive. My resulting volume is only 4TB......I cannot figure out what I am doing wrong.

You created a RAID 0 volume. The volume is limited in size to the smallest drive (or available free space).
You can create another 2TB volume on the 3TB drive.
But better is just create a 3TB RAID 0 with the 3 1TB drives.

no. That is not RAID, it is called concatenation. We are not going to support concatenation, as there is no performance benefit, and if any disk fails all data on the volume is lost, so there is not much benefit.
Apple supports this in Disk Utility, but we highly advise against using it.
