hi,
I have a problem, I can't mount raid5 and finish rebuilding. Raid5 doesn't mount at all even though there are no errors, I even tried to remove one of the disks but I still can't get to the data.

Please attach a SoftRAID tech support file. that is what I need to troubleshoot.
but FYI a volume that cannot mount cannot be rebuilt.
It appears the directory for your volume is damaged and MacOS could not repair it.
Sometimes with APFS, connecting to a different computer can make the auto repair work to mount it. (not frequently, but it happens often enough for me to mention this)
If you are not backed up, then you need to run one of two data recovery apps, we have tested:
Disk Drill (clever files.com)
R-Studio
Both have trials that can scan the volume to show you what they will recover before purchasing. find the actual volume object, which will be 6TB. scan it and make sure you see the structure (files/directories, etc), and then you can have high confidence most or all the data will be recovered.
Once you have your data, you need to delete the volume and recreate it, this is the best way forward. (although since you are on Standard, you can erase it as APFS in Disk Utility also)
This is a relatively new volume, and I do not see any kernel panics, or disk ejects, nothing to trigger this issue.
