I am running Mojave 10.14.6 with SoftRAID Lite 5.7.5 and right now I have two SSD's configured in a stripeset using HFS+. Am I able to set up a stripe using APFS? If so how do I configure that? I don't any of those options.

That will require 6.0 beta. We are not yet ready for a public beta, which should happen in another couple months.
