Just to confirm, is there a recommended stripe size for serving large video files (10+ gb)? There seems to be a general recommendation for 64kb, but it defaults to 256kb. Also, would you recommend 'server' or 'digital video' (and what's the difference between the two?)

There is very little difference with modern drives between 64K and larger Stripe unit sizes. Larger sizes may be slightly be slightly faster streaming, but any edits mean the drive have to download much more for a "chunk".
Server for RAID 0 will select 64k Digital Video will select 256K, which are guidelines.
With RAID 4/5, they primarily affect rebuilding priority.
