From what I understand, softraid is expected to have issues with Catalina until the new version is released. But will my drives continue to run under Catalina?

Yes they will mount. (with the "Bundled"/default driver that has limited functionality.

5.8 will be released in the next day or so.

Upgraded to Catalina and as expected the drives seem to read/write without any issues.

I tried upgrading the SR software to the latest 5.8, but with the SIP issue I'm instead going to wait until the next update and hope its resolved.

Please do update the driver. Your volume is mounted with a basic driver we license to Apple for compatibility. It does not warn of problems and cannot rebuild. Its purpose is to mount SoftRAID volumes.

So it is worth the hassle to disable SIP.

We are still working on a long term solution for this.

ok, so I just noticed the SIP issue applies to machines with the T2 Security chip. My machine is the Mac Pro 6,1. So does this fix still apply to me?

I believe it applies to all Catalina upgrades. Even when SIP is not in hardware, Apple has SIP "active".

What SIP without a T2 does is ill defined.

I’m unfamiliar with SIP. Will this affect any kind of security for my system?

Yes and no. SIP with an older computer doesnt do much.
With the T2 chip, it prevents hackers from installing drivers.
At this time, there are no real exploits for Catalina, so SIP is more of a preventive.
Apple is on top of potential exploits. Not to say something could hit in the future, but Apple is being very proactive about avoiding nightmare scenarios.

I would not worry about SIP in the short term. But after you install teh driver, you can re-enable SIP.

the other thing that some users encounter, is the need to disable Startup System Security (set it to none), this allows to to prevent, or allow starting up from a USB drive for instance.

All this occurred after the final Catalina beta.

Was able to disable SIP, install 5.8 and enable SIP without any issues last night. ;)
