Hello, are there any performance differences between SoftRAID and SoftRAID XT when used on a macOS machine and using OWC SATA3 drives enclosures via Thunderbolt 3?

No, the driver is idential. the only difference between SoftRAID and SoftRAID XT is XT only can manage disks in OWC enclosures. There are no other differences.
