For example I have a Thunderbay OWC enclosure with 4 drives in Raid 10. What will happen when my machine will dies (os issues, hardware issues etc.)? Can I install a SoftRAID app on a new machine and be able to use all my files from the same OWC Thunderbay 4 enclosure?
If yes, are there any specific steps to make it work?
If no, will I be able to recover data from these hard drives using some other method?

You can move the enclosure to another machine without any problem. All information about the RAID is self contained on the disks. You can even place them in different enclosures, different buses, etc. No problem at all.
