Inexplicably, macOS builtin Disk Utility RAID 1 provides redundancy without any read performance increase.
I looked around the SoftRAID site for RAID 1 performance information and struck out.
Does SoftRAID's RAID 1 double read speeds?
(If so, this detail should be conspicuous.)

It depends on the disks involved. Download the free trial and test with your disks.
the problem is the disk cache's, have to be in sync to take advantage of striped reads. We went through this once, but as it would involve tweaking every model of disks, we stopped.
Flash media should be able to double read performance or come close, however.
