Resize RAID1 Steps

My current 8TB APFS RAID1 (using 8TB disks) is getting full, so I want to Grow it, can I confirm the process please?

Replace each disk in turn with a larger drive

Resize to the new disk capacity

Yes, correct. You need to use 7.6 or later for this, we fixed a resize bug in 7.6.

Out of interest, for next time, could I add BOTH new disks to my RAID-1 at the same time? I did one at a time last time, so doing both together would be a lot quicker?

SoftRAID is designed so you can add all missing secondary disks, or new disks at the same time, yes.
