I've got a SoftRAID 5.x RAID10 volume spread across enclosures. I see the only 7.x license that supports this is Pro. The 7.x trial is working fine. What happens if I purchase XT instead of Pro? Will I not be able to manage the volume?

You will not be able to add/remove disks, etc. no. Your volume will work, however, we never block usage of an existing volume.

Does this mean disk replacement for failed drives wouldn't work?

If you do not have a viable version of SoftRAID, that is correct. If you have an "expired" support plan, all features are enabled. But if you upgrade macOS, and you do not upgrade SoftRAID for that OS, you can use your volume, but if a problem happens, you will not be able to replace a disk, no.
