I have a Mac Pro with 4 drives. Am I able to add two Airport Time Capsules to a RAID 1+0 for a total of 6 drives?

Sorry, you cannot. These are "network" drives and are not running Mac OS.
SoftRAID supports all direct connected drives, i.e, Thunderbolt, USB, SATA, eSATA, M2, FireWire, FibreChannel, SAS, and SCSI.
If the drives show up in the Disks column in SoftRAID, then SoftRAID can support them.
