This might be a silly question but how long does it take to build a Raid 0 array with two 5TB drives? I started it yesterday at around 3 and it is still not done, it just says "creating volume"

30 seconds or so.
Quit SoftRAID and try again. However,I would restart first.
What probably happened was when SoftRAID called the file system to create the volume, it did not respond correctly. SoftRAID uses OS X to perform these kinds of tasks.

Thank you for your response, I tried what you said and I'm running into the same problem. Any Ideas?

Try repair/first aid with Disk Utility.
Or, create a new admin account and see if that resolves this. this is an OS X issues of some kind triggering this.
