I went with this configuration because I expected it to give me a better read performance for video editing and it just isn't happening. I am running an Imac i5. It is connected directly to the machine via thunderbolt and my 7TB RAID 5 drive is about a third full. My read speeds are about 350 and the writes are below 200. Any help would be much appreciated!

My guess is that the volume is fragmented. Even the read speeds of 350 are slow. Benchmarks are not going to be consistent when data is on the volume and as a volume fills, it will get some what slower. However, if the volume gets fragmented, then performance will slow significantly. Try a backup restore and see if your performance improves.
