I downloaded the SoftRaid 8.3 package and I am confused about what it said about the driver being valid. As I understand Driver 8.3 is for MacOS 15 and later, OR 13.3 and earlier. What do I do with the 14.4.1 I am currently running on Driver 8.0??

Not to worry.
MacOS from 13.3 forward dictates the SoftRAID driver version and it cannot be changed in that MacOS version, its a protected driver.
Before 13.3, SoftRAID app will install the driver for that version of SoftRAID.
8.0 is what is loading in Sonoma. there are no issues with that.
