I have found via this forum that Apple doesn't let you boot from a RAID volume anymore but is that because of the T2 chip? ie if I disable the chip is it possible to boot from RAID or no?

The T2 is just one aspect of a decision Apple made in 10.13, when OS X would not install onto SoftRAID volumes, and with 10.13.4, even updaters would not work.
We are hoping to convince Apple to allow booting again, but at present, it is not possible. They are more worried about exploits/hacks, than users being able to boot from redundant volumes like Mirrors. Sad part of life.
