I have 2 new 8GTB hard drives that I want to add to a new volume. When I select them and choose max size, it shows just over 30 MB. Why?

There is probably a volume on the disks?
The only volume you can "add" disks to is a RADI 1 mirror volume. That is easy to do.
We do not support adding disks to existing RAID 0/4/5/10 volumes to increase their capacity.
