I went from 11.1 official to 11.3 beta 4 and I *did* have to do "allow" again to see the drives. Everything was fine afterwards.
the next beta, which should be in days, has the M1 Monitor menu item fixed. ;-)
@mountaincat Apple's way of signing and allowing system extensions changed big time from 11.1 to 11.3 beta. That was the main reason it did not work for quite some time. That is why you had to allow, that's totally OK. Glad everything works .)
After installing macOS 11.3 beta 5 on my M1 Mac mini the RAID array mounts correctly, but the SoftRAID 6.0.1 b53 app
- insists on installing the driver every time it is launched (which it reports it has successfully done without having to allow extensions)
- reports the array as unmounted
- the only operation it can perform on the array is to enable or disable safeguards
I am seeing the same thing on a late 2012 Mac mini also running macOS 11.3 beta 5

I'm having an issue with the new beta. Not sure if the issue prior to the update or if it happened as part of the update. I did a complete fresh reinstall of the OS with 11.3 beta 3. Everything went well with the set-up and went just as Sunstarfire described in his steps. Life was glorious and everything working. Then I installed some apps, most notable Audio Hijack from Rogue Amoeba. It has a similar driver like SoftRaid. At that point, I got a disconnect. I was able to trigger a new driver by setting-up a new Admin account. With that, I was able to get the driver updated and things seemed like they were working....but maybe not. Where I am at now...I'm on 11.3 beta 4. I have attempted to uninstall and reinstall SoftRaid. The driver installs with no reboot or permission request, it just says successful. No message for accepting in Security& Privacy. When I check the system report, I see SoftRaid listed and Loaded:Yes. To clarify my current issue, the drive is mounting after the desktop loads. I was trying to use the as a Home drive but it won't mount during start up.
Did you install a known compatible Audio Hijack from Amoeba for M1 and Big Sur?
If so, then you probably have the extensions issue where Big Sur blocks extensions when it encounters one it does not like, even printer drivers. Attach a SoftRAID tech support file and I can take a look.
@joemikebry using "uninstall SoftRAID" then restarting and installing the driver again. Do you get the System Preferences dialog box?
Just to be sure, since this is an M1 mini did you do these steps?

Select reduced security and enable this:
Select the “Allow user management of kernel extensions from identified developers” checkbox to allow installation of software that uses legacy kernel extensions.
I do not get the System Preferences dialog and I have set reduced security on the M1 Mac and I have the Rogue Amoeba SAR driver installed. Although I am seeing similar situations on both Intel and M1 Macs, I am most concerned with the M1 Mac at the moment as it is my production machine.

The fact you are not getting the dialog box is a clue. It indicates the driver is not being loaded into the extensions cache.
I do see three extensions you can delete, which could be the cause. Do the following, then "reinstall SoftRAID driver" and see if you get the System Preferences dialog:
Run the terminal.app
Paste in each command below:
sudo rm -r /Library/Extensions/BJUSBLoad.kext
sudo rm -r /Library/Extensions/CIJUSBLoad.kext
sudo rm -r /Library/Extensions/DymoUsbPrinterClassDriver.kext
sudo kmutil clear-staging
sudo kextcache -i /
Now restart and reinstall the driver.
(BTW: There is no Rogue Amoeba RAR driver installed on this machine, if it uses a kernel extension)

In this support file, your SoftRAID volume is mounted. (and the driver is of course, loading)
Is there a current issue ? I think you are set.
When I restart, it is unable to connect to the drive. I have to revert to my other admin that has a home drive on the internal drive. It finishes start up and the Thunderbay is the last drive to mount. I can hear the drive starting up but it never connects during start up.
I do not know then. You can try checking the SoftRAID VOlume preference, to "mount volumes when user not logged in"
This does not seem like a SoftRAID specific issue. All SoftRAID does is publish the volume. if the driver is loading (enter kextstat in the terminal and see if SoftRAID's driver is listed), then any issues are at the file system level
I uninstalled SoftRAID and the Rogue Amoeba SAR using their respective uninstall utilities, ran the terminal commands, and rebooted. I then ran SoftRAID 6.0.1 b53 and, as expected, it reported it had installed the SoftRAID driver complete with the license terms, but it did NOT trigger the Systems Preferences Dialog. I then rebooted a second time and although the array does mount, SoftRAID reports it as UNMOUNTED and is unable to perform any action on the array other than enabling or disabling safeguard. As a double check I performed the process a second time with the same results, only this time the terminal delete commands reported the files were not found (see the attached screen shot). I have also included a current SoftRAID Tech Support Document.

SoftRAID does not yet recognize APFS volumes in the volumes tile.
